The application of Artificial Intelligence (AI) in the food processing industry is ready to revolutionize the landscape of agri-food industry in the world. This paper is focused on exploring the current state and potential advancements of AI in one aspect of Pakistani agri-food sector: food processing sector. It will shed light on its implementation to enhance efficiency, productivity, and sustainability. Being a developing nation, Pakistan has substantial reliance on agriculture. The country faces unique challenges in its food processing industry which require better solutions. The integration of AI technologies offers a promising solution to address these challenges. This review emphasizes the limited ways in which such advance technologies have been implemented and adapted in Pakistan, while also identifying areas where there is a significant gap for further AI integration within the food processing sector. Key areas of focus are production processes and supply chain management. The paper provides concrete examples of potential AI implementations in the Pakistani food processing industry, illustrating their impact on reducing waste, improving quality control, and ensuring food safety. Despite the immense potential, this report also identifies the challenges inherent in implementing AI in Pakistan's agri-food sector. These challenges range from infrastructural limitations to the need for adapted AI solutions that consider the local socio-economic landscape of this country. The paper offers insights into overcoming these hurdles and outlines prospects for the continued integration of AI in the agri-food processing industry in Pakistan. In conclusion, this review serves as a comprehensive guide for stakeholders, policymakers, and researchers seeking to understand and contribute to the implementation of AI in Pakistan's food processing industry.
